Mexican-Style Corn Dip is a creamy, cheesy dip with sweet corn, a touch of spice, and fresh herbs. Perfect as a snack, appetizer, or side for chips, tacos, or grilled dishes.
🧾 Ingredients (Serves 4–6)
- 2 cups cooked corn kernels (fresh, frozen, or roasted)
- ½ cup cream cheese, softened
- ¼ cup sour cream or Greek yogurt
- ½ cup cheddar cheese, shredded
- 1 small red bell pepper, finely diced
- 1 small jalapeño, minced (optional)
- 1 tbsp fresh cilantro, chopped
- Salt & black pepper to taste
- Optional Yumino Twist: 2–3 tbsp Yumino Almonds or Cashews, chopped
👩🍳 How to Make
- Preheat oven to 180°C (350°F) if baking.
- Mix cream cheese, sour cream, cheddar, corn, bell pepper, jalapeño, and cilantro in a bowl.
- Season with salt and black pepper.
- Transfer mixture to a small baking dish.
- Top with optional chopped Yumino nuts for crunch.
- Bake 15–20 minutes until heated through and slightly golden on top.
- Serve warm with tortilla chips or crackers.
