Vegan Walnut & Peanut Butter Cookies
Makes: 13 cookies (55g each)
Bake time: 18 minutes at 170°C (338°F)
Ingredients:
- Whole wheat flour – 250g (approx. 2½ cups)
- Cocoa powder – 10g (2 tablespoons)
- Baking powder – 1 tablespoon
- Peanut butter – 50g (approx. 1/12 cup)
- Mashed banana – 120g
- Brown sugar – 120g (just under 1 cup)
- Olive oil – 80g (½ cup)
- Plant-based milk – 85g (½ cup)
- Chopped walnuts – 50g (½ cup)
- Raisins – 20g (approx. ⅓ cup)
Instructions:
- In a mixing bowl, beat the olive oil and sugar with an electric mixer for 1 minute until smooth.
- Add the peanut butter and mashed banana, and beat for another 2 minutes.
- Pour in the plant-based milk and mix with a spatula until fully combined.
- In a separate bowl, whisk together the flour, cocoa powder, and baking powder.
- Gradually add the dry ingredients to the wet mixture in three stages, mixing gently until just combined.
- Fold in the chopped walnuts and raisins.
- Cover the dough with plastic wrap and place it in the freezer for 1.5 hours.
- Once chilled, scoop the dough into 55g portions and shape into cookies.
- Bake at 170°C (338°F) for 18 minutes.
- After baking, let the cookies cool on the baking tray for 15 minutes to set properly.
