Ingredients (for the cookie dough):

  • Banana – 135g (mashed)
  • Peanut butter – 25g
  • Chocolate or vanilla protein powder – 32g
  • Cocoa powder – 2 tablespoons
  • Oat flour – 30g
  • Egg – 1
  • Baking powder – 1 teaspoon
  • (Optional: ½ tsp vanilla extract)

Instructions:

  1. Mash the banana in a bowl using a fork.
  2. Add peanut butter and mix well using a whisk.
  3. Add the egg (and vanilla extract if using), and whisk until smooth.
  4. Sift in the protein powder, cocoa powder, oat flour, and baking powder. Mix until combined.
  5. Let the dough rest in the fridge for 10 minutes.
  6. Scoop the dough onto a lined baking tray, leaving space between each cookie.
  7. Gently flatten the tops with your hand.
  8. Bake in a preheated oven at 170°C (338°F) for 15 minutes.
  9. Let cool and enjoy!
