Ingredients (for the cookie dough):
- Banana – 135g (mashed)
- Peanut butter – 25g
- Chocolate or vanilla protein powder – 32g
- Cocoa powder – 2 tablespoons
- Oat flour – 30g
- Egg – 1
- Baking powder – 1 teaspoon
- (Optional: ½ tsp vanilla extract)
Instructions:
- Mash the banana in a bowl using a fork.
- Add peanut butter and mix well using a whisk.
- Add the egg (and vanilla extract if using), and whisk until smooth.
- Sift in the protein powder, cocoa powder, oat flour, and baking powder. Mix until combined.
- Let the dough rest in the fridge for 10 minutes.
- Scoop the dough onto a lined baking tray, leaving space between each cookie.
- Gently flatten the tops with your hand.
- Bake in a preheated oven at 170°C (338°F) for 15 minutes.
- Let cool and enjoy!
