🍪 Date & Walnut Cookie 🍪
A naturally sweet, soft cookie packed with nutrients and flavor!
Ingredients (for the cookie dough):
- All-purpose flour – 165g
- Egg – 30g (approximately ½ a large egg)
- Date syrup – 90g
- Dates (preferably dry) – 120g (pitted and chopped)
- Butter (room temperature) – 100g
- Vanilla extract – ½ tsp
- Baking powder – ½ tsp
- Chopped walnuts – ½ cup
Instructions:
- Pit and chop the dates into small pieces.
- In a mixing bowl, cream the softened butter with vanilla until light and fluffy.
- Add the date syrup and mix well.
- Add the egg and beat just until incorporated.
- Mix flour and baking powder together, then sift into the wet ingredients in 2–3 additions, mixing gently each time.
- Fold in the chopped dates and walnuts.
- Chill the dough in the fridge for 15 minutes.
- Portion the dough into balls, place them on a lined baking tray with space in between, and lightly flatten the tops by hand.
- Bake in a preheated oven at 180°C (356°F) for 15 minutes.
Important Notes:
- 📌 Depending on your flour, you may need to adjust the amount by 1–2 tablespoons.
- 📌 The cookies will remain soft after baking — this is their ideal texture.
- 📌 For best flavor and freshness, store them in an airtight container in the fridge after they cool completely.
