🍒 Black Forest NYC Cookie 🍒
Rich, chewy, and bursting with chocolate and cherry flavor!
Cookie Dough Ingredients:
- Cold butter – 95g
- Brown sugar – 68g
- White sugar – 68g
- Cold egg – 1
- All-purpose flour – 180g
- Cocoa powder – 30g
- Milk chocolate chips – 75g
- Dark chocolate chips – 75g
- Baking powder – 1½ tsp
- Salt – ½ tsp
- Vanilla extract – ½ tsp
- Chopped cherries – 150g
Cherry Jam (Optional Filling/Topping):
- Chopped cherries – 200g
- White sugar – 50g
- Cornstarch – 1 tbsp
- Water – 40ml
- Fresh lemon juice or citric acid – 1 tsp
Cookie Dough Instructions:
- In a large mixing bowl, beat cold butter, brown sugar, and white sugar using a paddle attachment for about 30 seconds.
- Add the chocolate chips and mix briefly.
- In a separate bowl, mix all dry ingredients (flour, cocoa powder, baking powder, salt), then sift them into the butter mixture. Mix for 30 seconds to 1 minute.
- Add the egg and vanilla, and mix for another 30 seconds until fully combined.
- Fold in the chopped cherries.
- Divide the dough into portions weighing 80–125g each.
- Wrap each dough ball with plastic wrap or store in an airtight container. Refrigerate overnight, or freeze for at least 2 hours.
- Preheat your oven to 190°C (375°F).
- Line a baking tray and place the cookies spaced apart. Bake for 16 minutes.
- While still warm, you can optionally pipe cherry jam into the center or drizzle on top for decoration.
Cherry Jam Instructions:
- Mix cornstarch and water until fully dissolved; set aside.
- Blend the cherries into a purée.
- In a saucepan, combine the puréed cherries, sugar, and lemon juice. Cook over low heat until the sugar dissolves.
- Add the cornstarch mixture and stir continuously until the jam thickens.
- Allow to cool completely before using. Note: it will thicken further as it cools.
